WHAT IS PALM JAGGERY MADE OF?
Palm jaggery can be made from the sap of different palm trees such as coconut, date, palmyra and nippa. Our palm jaggery is made from the sap of the date palm tree.The sap is collected early in the morning by creating an incision in the tree’s bark. The sap that oozes is collected in an earthen pot and processed within 8 hours. It is sieve filtered into a large flat-bottomed iron vessel, boiled and manually churned over low to medium heat. Once the sap attains a paste-like consistency, it is transferred into wooden trays and levelled with a wooden roller. Then it is constantly scraped and turned with wooden forks and spatulas as it cools till we get granulated pieces of jaggery. The granules are sieved and separated based on size, resulting in a deliciously sweet fine powder.
