WHAT IS COCONUT JAGGERY MADE OF?
This jaggery is made from the sap of the coconut palm's inflorescence (cluster of flowers). A wound is created at the tip of the inflorescence from where the sap is tapped. It is then filtered through a sieve to remove particulate matter. After filtration, the sap is boiled and churned continuously over low to medium heat till it reaches a paste-like consistency. It is poured into wooden trays where it is flattened with a wooden roller then constantly scraped and churned till powdered jaggery is obtained. It is filtered through a sieve again to separate the granules based on size. The end result is a naturally sweet fine powder with coconut undertones that is convenient to use for daily cooking.
