Vegan Mango Falooda Recipe - Rural Treasures

INGREDIENTS:
For vegan milk:
- 4 Tbsp Vegan Milk Powder
- 200 ml lukewarm water
For vegan condensed milk:
- 4 Tbsp Vegan Milk Powder
- 150 ml lukewarm water
- 3/4 Cup sugar
For mango puree:
- 3/4 cup cold vegan milk
- 1 mango
For the Falooda:
- 2 Tsp sabza seeds
- 2 Tbsp falooda (sev)
- 2 Tbsp rose syrup
- 1/2 cup vegan condensed milk
- 1/2 cup mango puree Vegan vanilla ice cream
- 1 chopped mango
For garnishing:
- Slivered almonds & pistachios
- Rose syrup
You can also use mango ice cream and any dry fruits of your choice.
How to make it:
1. Prepare Vegan Milk by mixing 4 tbsp of Vegan Milk Powder in lukewarm water. Let it cool down to room temperature and then refrigerate it.
2. Vegan condensed milk is made by first mixing 4 tbsp of Vegan Milk Powder in 150 ml of water. Heat the vegan milk over low flame while continuously stirring it. Add sugar and continue to cook for 20-30 minutes till it thickens.
3. Boil the sevaiya in water until cooked properly. Rinse with water and keep it aside.
4. Blend 1 mango with cold vegan milk for a smooth puree and refrigerate it. 5. Chop 1 mango into small cubes and refrigerate them as well.
5. Soak the sabza seeds in water for 10 min. Drain the water.
6. Sliver almonds and pistachios for garnishing.
LAYERING:
- Start layering in a glass with mango puree
- Sabza seeds
- Chopped mango cubes
- Rose syrup
- Falooda (Sevaiya)
- Vegan condensed milk
- Continue layering till the glass is full
- Top it off with vegan vanilla ice cream, rose syrup, dried fruits and chopped mangoes
